3 Idaho potatoes ( 2 lbs)
1 medium onion
2 eggs
2 Tablespoon flour
¾ teaspoon salt
Dash of nutmeg
Dash of pepper
Oil for frying (Crisco)
Applesauce or sour cream used as sides

Wash and pare potatoes. Grate potatoes on course grater into bowl filled with ice water. Let stand 15 minutes. Grate ¼ cup onion. In bowl beat eggs with wire whisk. Add grated onion, flour, salt, nutmeg and pepper. Mix well. Drain potatoes and pat dry with dish towel. Measure about 4 cups and add to egg mixture. Mix well. In iron skillet slowly heat oil (about ¼ inch) until very hot but not smoking. For each pancake, drop about ¼ cup of potato mixture into hot oil. Make 2 or 3 pancakes at a time. Flatten with spatula. Fry 2-3 minutes on each side. Drain on paper towels.
