6 T. cornstarch
3 egg yolks
¼ t. salt
2 T. butter
1 cup sugar
2 t. grated lemon rind
2 cups water
5 T. lemon juice

Directions:
Directions:
Combine cornstarch, salt and ½ cup sugar in top of double boiler. Add water and mix well. Cook over boiling water until thick, stirring constantly. Cover, cook 10 minutes stirring occasionally.. Combine egg yolks and remaining 1/2 cup of sugar in bowl. Stir in a little of the hot mixture into eggs. Pour back into double boiler; cook 2 minutes longer. Stir. Remove from heat stir in butter, lemon rind and juice. Cool. Pour into baked pie shell. Top with meringue or whipped cream.
