3 slices bacon
2 T. flour
¾ c. milk
½ t. salt
1 hard boiled egg, chopped
1-2 t. vinegar, according to preference
1 c. chopped dandelion leaves

Directions:
Directions:
Fry bacon and set aside. Brown flour in the bacon grease. Thin with about a ½ cup of water, then stir in milk until thickened. Add chopped egg, vinegar and salt. Add chopped dandelion leaves and cook several minutes. If too thick add a bit more milk. Serve over mashed potatoes, topped with bacon pieces.

Use early dandelion leaves only, as the leaves turn bitter when they start blooming.
