4 cube steaks, about 5 oz each
1/4 tsp. salt
1/4 tsp. pepper
1 Tbsp. butter or margarine

Salsa:
2 large tomatoes, chopped
2 Tbsp. red onion, chopped
3 Tbsp. celery, chopped
3 Tbsp. green pepper, chopped
2 Tbsp. green chile peppers, chopped
1/2 tsp. mustard seed
1 Tbsp. red wine vinegar
1 Tbsp. chopped parsley or cilantro
1/2 tsp. salt
dash black pepper
2 Tbsp. oil
sour cream, optional
grated cheese, optional

Directions:
Directions:
Start making the salsa. In a bowl, combine the tomatoes, onion, celery, green pepper, chile peppers, mustard seed, parsley or cilantro, vinegar, salt and pepper. Stir in oil. Let salsa stand for a few minutes for flavors to blend. In a skillet, heat butter. Brown cube steaks in butter on both sides until brown. Reduce heat, cook uncovered for a few more minutes until cooked to your liking. Sprinkle with salt and pepper. Arrange steaks on a hot serving platter. Spoon a little salsa over each steak. Serve remaining salsa alongside. Serve with sour cream, grated cheese and tortilla chips, if desired.
