2 cans flaked tuna or Salmon
1 pkg. Stove top stuffing mix
1 c. mozzarella, shredded
1/2 c. carrot, shredded
1/4 c. salad dressing, such as mayo or miracle whip
2 tbsp. sweet relish (can be omitted)
3/4 cup water

Mix the fish, stuffing, cheese, carrots, dressing relish and water in a bowl. Cover the bowl and refrigerate for 10 minutes. Heat a large non-stick skillet sprayed with cooking spray, on medium heat. Scoop fish mixture, using about1/3 c. for each caşşke, into skillet in batches. Try using an ice cream scoop to make evenly portioned cakes. Gently flatten cakes using a spatula. Cook 3 min. on each side or until they are golden brown on both sides, turning cakes over gently.

I have never used the relish in this recipe and don't feel that anything was missing. Also, if you would rather not do this as individual cakes (it is rather fiddly), then press your mixture into a baking dish and bake in 350 F. oven for approx. 30 min. or until getting slightly browned and crispy on top.
