8 baking potatoes, washed
3 tbsp canola oil
2 sticks salted butter
1 cup bacon bits (fry your own)
1 cup sour cream
1 cup of cheddar or jack cheese or a mixture of both, plus more for topping
1 cup whole milk
2 tsp seasoned salt
3 green onions, sliced
Freshly ground black pepper to taste

Directions:
Directions:
1. Preheat the oven to 400º.
2. Place the baking potatoes on a baking sheet and rub them with canola oil. Bake the potatoes for 1 hour, making sure they are sufficiently baked through.
3.Slice the butter into pats. Place in a large mixing bowl and add the bacon bits and sour cream.
4. Remove the potatoes from the oven and reduce heat to 350º.
5. With a sharp knife, cut each potato in half lengthwise.
6. Scrape the insides of the potatoes into the mixing bowl
being careful not to break the shell. Leave a small rim of potato intact for support.
7. Lay the hollowed out potato shells on a baking sheet.
8. Smash the potatoes into the butter, bacon bits and sour cream. Add the cheese, milk, seasoned salt, green onions and pepper to taste and mix well.
9. Fill the potato shells with the mixture to where the potatoes look abundant and heaping.
10. Top each potato with extra cheese and place back in the oven until the potatoes are warmed through, about 15-20 minutes.
