Orphan Girl (or Baileys) Cupcakes Recipe

2 1/2 cups cake flour
3 tsp baking powder
1/2 tsp of salt
1 tsp of cinnamon
1 1/2 cups granulated sugar (use super fine sugar if you can find it!)
3/4 cups unsalted butter, room temp
3 eggs room temp
3 tsp of vanilla
1 cup Orphan Girl Liquor (or Baileys Irish Cream) **(Separated, 1/2 cup for the cakes, 1/2 cup to pour over the cakes after they have been baked)

**1. Make the ganache first (also see **Note)

2. Make the cupcakes. Preheat oven to 350F. Line the muffin tins with 36 cupcake liners (although this recipe usually makes 28-32 cupcakes).

3. In a large bowl, mix together the dry ingredients: flour, baking powder, salt, and cinnamon

4. In a large bowl, use mixer to cream together the sugar and butter for about 3 minutes until light and fluffy

5. Add eggs one at a time until incorporated, then mix in vanilla.

6. Add flour mixture in 3 additions, alternating with the alcohol, starting and ending with the flour mixture.

7. Fill cupcake liners about 2/3 fill and bake for 15-20 minutes (check often, don't over bake!), Cool in pan for few minutes, then move to wire racks.

9. Using a toothpick to poke holes in the tops of the cupcakes and using a pastry brush, brush the additional 1/2 cup of Orphan Girl over the cupcakes

10. Make the butter cream frosting

11. Frost cooled cupcakes using a pastry bag, then drizzle with the ganache.
 

Ganache & Buttercream Frosting

Buttercream Frosting:
2 sticks (1 cup) salted butter, room temp
2 sticks (1 cup) unsalted butter, room temp
3 cups powdered sugar
1 tsp cinnamon
1/4 ­ 1/2 cup Orphan Girl (or Baileys)­ enough to get frosting to
desired flavor and consistency

Chocolate Ganache to drizzle over top:
1/2 cup heavy cream
1/2 cup semi sweet chocolate chips
3 Tbsp Orphan Girl (or Baileys)

(also see **Note)­ in a saucepan bring the cream to a simmer over medium heat.

Remove from heat and whisk in chocolate until it's melted and incorporated. Whisk in the Orphan Girl (or Baileys).

Refrigerate until it has a good consistency to drizzle over top.

Butter Cream Frosting­
Place the butters, powdered sugar, and cinnamon in large bowl.

Beat on high until light and fluffy. Add Orphan Girl (or Baileys) a bit at a time until buttercream is desired flavor and consistency.

**Note­ For the ganache you can use 1/4 cup heavy cream and 1/2 cup semi­sweet chips plus 3 tsp of Orphan Girl and make it at the end. It is generally thick enough to use as soon as it cools a little bit, instead of cooling in the fridge.

These cupcakes were always a big hit on my friend's birthdays! You can use Orphan Girl if you can find it, or Baileys is good too!
