- 3/4 cup butter
- 1/4 cup white sugar
- 6 tbsp unsweetened cocoa powder
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp milk
- 2 cups graham cracker crumbs
- 1 cup shredded coconut
- 1/2 cup finely chopped walnuts

MIDDLE LAYER
- 1/2 cup butter, softened
- 4 cups confectioner's sugar
- 4 tbsp vanilla custard powder
- 6 tbsp milk


TOP LAYER
- 1 tbsp butter
- 8 (1 oz.) squares semisweet chocolate, chopped

Directions:

1. Mix 3/4 cup butter, white sugar, cocoa, egg, milk and vanilla in a heavy sauce pan or double boiler. Stir over low heat until mixture is smooth

2. Combine graham crackers, coconut, and walnuts and add to the melted mixture. Mix well and pack into buttered 9 inch square cake pan. Chill while you make the middle layer.

3. Cream 1/2 cup butter, confectioner's sugar, vanilla custard powder and milk. Beat until creamy and spread over melted base.

4. Refrigerate until hardened (approx. 45min)

5. Melt semi-sweet chocolate with 1 tbsp butter (in microwave for approx. 1 1/2 minutes) and drizzle over custard icing. Refrigerate for 1 hour, then score chocolate with a sharp knife to prevent chocolate from cracking when cut. Return to fridge to chill completely.
