Ingredients:  
3 fresh or frozen chicken breasts.
1/2 of a 20-oz can crushed pineapple, drained
1 15-oz can black beans, rinsed and drained
1 c medium salsa
5-6 burrito sized tortillas
1 10-oz can green enchilada sauce
1 c shredded cheddar and Monterey jack cheese blend
1 c cooked rice

Directions:
Directions:
Place chicken, pineapple, beans an salsa in a slow cooker.*
(*Can be prepared ahead of time and frozen in a gallon-sized freezer bag. When ready to use, thaw in fridge for 24 hours.)
Cook on low for 6 to 8 hours.
Remove chicken and shred. Mix chicken back into the pot with the rest of the ingredients in the recipe.
Mix in cooked rice.
Fill the burrito tortillas and place in a 9x13 inch pan.
Pour the green enchilada sauce over the burritos.
Top with shredded cheese and place under broiler until cheese is melted, about 5 minutes.
