1 lb boneless, skinless chicken thighs
salt, to taste
pepper, to taste
½ c onion, diced
1 c honey
1 c soy sauce
¼ cup ketchup
1 tbsp canola oil
2 garlic cloves, minced
¼ tsp red pepper flakes
1 to 2 tbsp cornstarch
sesame seeds, optional

Directions:
Directions:
Salt and pepper chicken. In a medium bowl, mix together honey, soy sauce, ketchup, oil, garlic, red pepper flakes, and onion. Place chicken and mixture into a slow cooker.*
(**Can be prepared ahead and frozen in a gallon-sized freezer bag. When ready to use, thaw overnight in the fridge.)
Cook on low for 3 to 4 hours. Remove chicken and slice into strips.
Combine 1 tbsp cornstarch with 1 tbsp water, pour into the slow cooker and mix.
If the sauce doesn't thicken, add another tbsp cornstarch and a tbsp of water.
Place chicken back in the slow cooker and stir to coat.
Serve over rice, sprinkle with sesame seeds.
