Prime Rib Roast at room temperature (very important)
2 tbsp butter at room temperature

Directions:
Directions:
Preheat oven to 450º.
Pat the room temperature prime rib dry with paper towel.
Pat the cut end ONLY with butter. *Do not add salt to the outside as salt draws out moisture.
Place roast rib side down/fat side up in pan.
sear for 15 minutes at 450º and then turn down to 325º for the rest of cooking time.
every 1/2 hour, baste the cut ends. Do not cover the roast.
Check for preferred level of doneness.
Remove from oven, cover loosely with aluminum foil and allow to rest for 10 to 15 minutes.

Figure on a generous serving - 2 people per rib. So that means:
6 people - 3 rib roast
8 people - 4 rib roast
10 people - 5 rib roast

Internal temperatures:
Rare - 120º to 125º
Medium Rare - 130º to 135º
Medium - 140º to 145º
Medium Well - 150º to 155º
Well Done - 160º or above
