Breakfast meat - Sausage links or loose, bacon, scrapple, etc.
Eggs
Milk
Olive oil
Onions, peppers - frozen or fresh
Mushrooms - optional
Other vegetables as desired
Spices - pepper, Old Bay, etc. as desired
Cheese - Feta [shown], cheedar, havarti, swiss, etc - or combination

Cook meats in separate pan on medium low heat until done
Heat a little olive oil in skillet on medium low heat
Add onions, peppers and vegetables, heat until tender
Beat eggs and milk together in bowl and add to vegetables
Spices to taste
Cut meats and add to eggs and vegetables - let cook for a few minutes until eggs harden some and brown a little
Flip egg mixture to cook remainder for a few minutes
Sprinkle cheeses on top and let melt some
Reduce heat for a minute or two
Serve hot
