10 whole cooked lasagna noodles
¾ lb. ground beef
¼ lb. mild Italian sausage
2 cloves minced garlic
1 can (15 oz.) tomatoes
2 small cans tomato paste
1 can tomato sauce
⅛ tsp. dried basil
⅛ tsp. dried oregano
⅛ tsp crushed red pepper
salt and pepper to taste
32 oz. small curd cottage cheese
2 eggs, beaten
parsley flakes
¾ c. freshly grated parmesan cheese
salt and pepper to taste
1 lb. sliced mozzarella cheese

Preheat oven to 375º. In a large saucepan, cook the ground beef and sausage, with the garlic, until browned. Add in the canned tomatoes (crush the whole tomatoes with your hands), tomato paste, tomato sauce, basil, oregano, and crushed red pepper. Slowly simmer for 30 minutes. Season to taste with salt and pepper while meat mixture is simmering, in a small mixing bowl mix together the cottage cheese, beaten eggs, parsley flakes, and grated parmesan cheese. Set aside. Cook lasagna noodles, as per package directions. Slice mozzarella cheese, and set aside.
To assemble:
In a 9”x11” Pyrex baking dish, put down a layer of noodles, then a layer of the cottage cheese mixture, then a layer of the meat/ tomato mixture, then slices of mozzarella chese. Repeat the layers, ending with the top layer being mozzarella cheese. Liberally spray the bottom side of aluminum foil with non-stick cooking spray. Cover the lasagna with the foil, cooking spray side down. Bake for 45 mins - until lasagna is bubbling and cheese is melted.

In 1989, Dan, his mom Marge ( better known as Ma), Danny, Laura, and I piled into our mini-van, and headed off for an adventure. First stop (for 1 night only) Las Vegas. Next Hoover Dam, then onto the Grand Canyon. Next was Carlsbad Caverns, then onto see The Alamo (Dan’s hero is John Wayne!) in San Antonio Texas. From there, we headed to Florida. We stopped at Busch Gardens in Tampa Florida, then headed east to Uncle Bob and Aunt Isabel’s in Melbourne Beach. What a WONDERFUL time we had there! Mom and Dad had flown in, and we were all there to help celebrate Bob and Isabel’s 40th wedding anniversary. We spent about a week there with them, then continued up the east coast to Washington DC, Mount Vernon, Monticello, and Williamsburg. It was an incredible trip, but the highlight was certainly the time spent with Uncle Bob and Aunt Isabel. This lasagna was one of the dinners Uncle Bob fixed while we were there.
