¼ c. chopped green pepper
1 c. fresh mushrooms, thinly sliced
2 T. butter
2 T. all-purpose flour
¾ tsp. salt
2 c. light cream
3 c. cubed cooked chicken
3 egg yolks
½ tsp. paprika
4 T. butter, softened
2 T. dry sherry
1 T. lemon juice
1 tsp. onion juice
2 T. chopped, canned pimentos
Puff pastry or egg noodles

Directions:

Cook green pepper and mushrooms in 2 T. butter until tender, but not brown. Push the veggies to one side, and blend flour and salt into the butter. Stir in the cream, and cook and stir until sauce thickens and bubbles. Add the chicken and heat, stirring occasionally. Meanwhile, in a small bowl, blend the eggs yolks, paprika, and 4 T. softened butter. Set aside.
To the chicken mixture, add sherry, lemon juice, and onion juice. Add ½ c. of the hot mixture to the yolks to temper them, then add yolk mixture, all at once,into hot chicken mixture, stirring until blended. Immediately remove from heat, and stir in pimentos. Serve at once over egg noodles or in puff pastry.

Mom said Tony LOVES her Chicken A La King, and she had searched through all of her bags of recipes to find this recipe. She had planned to make it for that last Family Christmas Gathering that we had out in her garage, but she just wasn’t up to it.
