Ingredients: Fish Marinate: ½ c. olive oil ¾ c. lemon juice ½ tsp. chili powder 2 T. garlic, finely chopped 4 tilapia or cod fillets Salsa Fresca: 3 ripe tomatoes 1 ripe avocado ½ c. chopped red onion 1 chopped fresh jalapeño pepper with seeds and membranes removed 2 T. chopped cilantro 1 T. lime juice 1 T. olive oil 2 cloves garlic, chopped

Directions:Combine all of the fish marinate ingredients. Put the fish in a shallow baking dish. Marinade for 1 hour, turning the fish to ensure even coverage. In a mixing bowl, combine all of the Salsa Fresca ingredients, and refrigerate for one hour. After fish has marinated for 1 hour, grill the fish. Serve the grilled fish in warmed corn tortillas with the salsa Fresca. Top with a variety of toppings which might include: salad; finely chopped lettuce; cabbage; chopped green onions; cilantro; vinegar and oil dressing; sour cream mixed with a little milk, ¼t tsp. pressed garlic, and ½T. lime juice; a sprinkling of parmesan cheese. |

Notes: We had these the first time when we were staying up near Roseburg, Oregon with Terry, Donna, Charleen, and Mike. They were delicious. The dinner was topped off with a fresh blackberry cobbler Charleen made with some berries we had picked that afternoon down by the river at Terry and Donna’s. YUM!
