6 large navel oranges
1# shrimp
3 T. mint ( optional)
4 medium tomatoes, chopped
1/8 t. salt and pepper

Directions:
1. Using a grater, grate enough peel to yield 2 T. of zest; put 1 T in each of two medium bowls
2. Peel remaining oranges, remove pits and cut to segments that are 1/2 inch chunks.
3. Add chunks of oranges, tomatoes , salt and pepper to one bowl of zest, cover and refrigerate. ( optional) Add 1 1/2T. mint
4. Squeeze juice from the zested oranges and add to the other bowl of zest.
5. Stir in shrimp and 1 1/2 T. mint (optional); cover and refrigerate at least 30 minutes up to two hours.
6. Place shrimp in saucepan and cook until pink.
7. Spoon 1/4 of the tomato orange mixture onto a plate and top with cook shrimp.

Personal Notes:
You can grill the shrimp. Thread shrimp onto 4 skewers and grill until done, about 5 minutes.
Place cooked shrimp on tomato salad mixture.

Could use scallops instead of shrimp. They can be grilled. Use same directions for grilling as above.
