Ingredients: 2 tsp. oil 2 onions, chopped 3 cloves garlic, minced 1 lb. lean ground beef ¾ lb beef sirloin, cubes (Mom had written the comment,” use all hamburger “) 1 can (14.5 oz.) diced tomatoes 1 can dark beer 1 c. strong coffee 2 cans (6oz ea) tomato paste 1 can beef broth ½ c. brown sugar 3½ T. chili sauce (Mom’s comments, “use chunky salsa”, and “ maybe chili powder instead”) 1 T. cumin 1 T. cocoa 1 tsp. oregano 1 tsp.cayenne 1 tsp. coriander (Mom had crossed out the cayenne and coriander and written ¾ tsp. chili powder) 1 tsp. salt 4 cans (15 oz ea) kidney beans (Mom had written, “cook dried pinto beans instead”) 4 chili peppers, chopped

Directions:1. Heat oil. 2. Cook onions, garlic, and meat until brown. 3. Add tomatoes, beer, coffee, tomato paste, and beef broth. 4. Add spices. Stir in 2 cans of kidney beans and peppers. If using the pinto beans, as Mom suggested, I would soak them the night before, cook the next morning with salt, pepper, and onion. Cook for 3 hours. Drain them. In the step in this recipe where the 2 cans of kidney beans are to be added, I would add all of the pinto beans. If using the kidney beans, as the recipe calls for, just add the two cans. 5. Reduce heat and simmer for 1½ hours. 6. Add remaining 2 cans of kidney bean and simmer for another 30 minutes. |
