5 lb. chicken parts, Belle used full leg with thighs
1tbsp chicken base (1 cube of chicken bullion)
2 large onions root end trimmed cut in half leave yellow skin on
1 gallon of water
5 carrots trimmed, peeled and cut in half
3 celery stalks, cleaned and cut in half
spices:
1 whole clove
4 allspice berries
2 bay leaves
4 sprigs fresh parsley
6 peppercorns
1 tsp salt adjust to taste up to 1 tbsp

Place chicken in pot. Cover with water. Bring to a boil and simmer for 2 to 2 1/2 hours, skimming any impurities to insure a clear broth. Add vegetables and spices during the last hour of cooking. Strain everything out of the broth.

Bone the chicken pulling the meat into large chunks. Place on a platter. Slice the carrots. Return the carrots to the broth.

Add noodles (Kluski) to the serving bowls. Place pieces of chicken on the noodles.The ladle the soup on top of the noodles and meat.

This is a favorite of everyone, especially during the winter months. The broth is rich and nourishing. The chicken is tender and the homemade noodles are just fabulous.
