4 boneless chicken breasts
1 can kernel corn, drained
1 can black beans, rinsed & drained
1 jar salsa (approx. 2 cups)
green, red, yellow pepper strips
grated cheddar cheese
sour cream
chopped green onions

Directions:
Directions:
In a slow cooker, layer ¾ of the corn and beans and half the salsa. Arrange chicken over salsa; top with remaining corn, beans and salsa. Cover and cook on low for approximately 6 hours or until chicken is cooked through.

Remove chicken from slow cooker and with 2 forks, shred the chicken. Return it to slow cooker. Mix and heat a few more minutes. Serve alone or on top of rice.
Top with peppers, sour cream, cheese and green onions.
