4-5 medium potatoes, peeled & cut
1 lb. ground beef
1 large onion, chopped
1 can kernel corn, drained
¾ cup bbq sauce
1 pkg. cream cheese, softened
5 tbsp. softened butter or marg.
salt & pepper
1 cup shredded cheese

Directions:
Directions:
Boil potatoes and cook until tender.
Meanwhile, cook the beef and onions until no longer pink. Drain. Stir in corn and bbq sauce.
Drain potatoes. Mash with cream cheese, butter, salt & pepper.
Spoon meat mixture into greased 9 x 13 pan or large casserole dish. Spread mashed potatoes over top and
sprinkle with cheese. (or mix cheese into the potatoes)
Bake uncovered at 350º for 25-30 minutes.

*This casserole can be covered and frozen for a couple of months. When ready to use, thaw first and then cook as above)
