5-6 medium potatoes, chopped
4 boneless chicken breasts
1 tbsp. lime juice
½-¾ cup melted butter or margarine
1½ cups shredded tex-mex cheese
1 cup salsa (or more if desired)

Directions:
Directions:
Preheat oven to 425º. Line 9 x 13 pan with foil. Toss potatoes in ¼ cup butter and arrange in layer in prepared pan.
Bake for 10 minutes. Remove from oven and push potatoes to side (or use a separate pan for chicken).
Put chicken in pan. Stir together remaining butter and lime juice. Brush onto chicken. Return both potatoes and chicken to oven.
Bake for 20-30 minutes or until chicken is no longer pink inside. In bowl, toss shredded cheese and salsa together.
Sprinkle over chicken and potatoes. Return to oven for a few minutes to melt cheese.
You may top with chopped green onions if desired. Serve.
