4 large chicken breasts

Marinade:
1 cup water
¼ tsp. ground ginger
⅓ cup teriyaki sauce
1 tsp. red pepper flakes
1 tsp. orange juice
½ cup lime juice
½ tsp. salt

Dressing: 2 tbsp. chunky salsa
¼ tsp. dried parsley
⅛ tsp. cumin
¼ cup mayonnaise
1 tbsp. milk
¼ cup sour cream
¼ tsp. hot sauce

Topping: 1 cup shredded monterey jack cheese
2 cups crunchy tortilla strips

Directions:
Directions:
Whisk together marinade ingredients. Coat chicken in mixture and marinade chicken for at least 2 hours.
Meanwhile, whisk together mayonnaise, sour cream and milk until well-mixed. Add rest of dressing ingredients and mix well. When marinating time is finished, discard liquid.
Heat grill pan with 1-2 tbsp of oil. Grill each piece of chicken for 8-10 minutes so that chicken will be golden brown on both sides and cooked through. Then brush the chicken with dressing, top with cheese and broil until cheese melts completely. (approx. 8 mins).

Serve chicken over the tortilla strips, along with spanish rice.
