1 tsp salt
1 tsp cinnamon
1 & 1/2 cup brown sugar
2/3 cup corn oil
1 large egg
5 cups cut rhubarb

2 & 1/2 Cup Flour

These two gluten-free flour mixtures can be substituted for wheat flour cup-for-cup:
Gluten-Free Flour Mix 1
1/4 cup soy flour
1/4 cup tapioca flour
1/2 cup brown rice flour

Gluten-Free Flour Mix 2
6 cups white rice flour
2 cups potato starch
1 cup tapioca flour
