1½ lbs.potatoes (approx. 4 large),
peeled and cut up
½ cup sour cream
¼ cup milk
½ tsp. salt
1 cup shredded cheddar cheese
1½ lbs. lean ground beef
¾ cup chopped red or green pepper
½ cup chopped onion
2 cloves garlic, minced (or garlic
powder)
1½ cups frozen kernel corn
1 cup water
1 6-oz. can tomato paste
½ cup chopped dill pickles
¼ cup mustard
1 tsp. oregano
chopped green onions (if desired)
crisp, crumbled bacon (if desired)

Directions:
Preheat oven to 350º. Cook potatoes in boiling water until tender. Drain and mash. Gradually beat in sour cream, milk and salt. Stir in 1/2 cup of the cheese. In large skillet, cook ground beef, red/green pepper, onion and garlic until meat is browned. Drain. Stir in next 6 ingredients. Bring to boiling. Reduce heat. Simmer uncovered 5 minutes. Stir in remaining cheese.
Transfer meat mixture to a shallow baking dish. Spoon mashed potatoes in mounds onto meat mixture. Sprinkle with additional cheese. Bake 20 minutes or until heated through and cheese is melted.
If desired, top with green onions and bacon.
