4- 2 Bone Thick Cut Pork Chops
Kosher Salt
1/4 C Coarse Black Pepper
2 Tbsp packed Brown Sugar
1 Tsp Smoked Paprika
Vegetable Oil for grill

SAUCE

2 Tbsp Butter
1 C Diced Onions
1/2 C Apple Cider Vinegar
1/2 C Brown Sugar
3/4 C Apple Juice
1/2 C Maple Syrup
3/4 C Ketchup
1/4 C Bourbon
1/4 C Prunes or Cherries
1 Tbsp Worcestershire Sauce
1/8 tsp Cayenne Pepper
Kosher Salt

1. Combine 2 Tbsp Salt, Black Pepper, Brown Sugar, and Paprika in bowl and rub all over the Chops. Wrap in plastic wrap and refrigerate 2 to 4 hours.
2. Melt Butter over medium heat, add Onions cook until translucent, stir in Vinegar and Brown Sugar until dissolved.
3. Add Ketchup, Apple Juice, Syrup, Bourbon, Prunes or Cherries, Worcestershire Sauch, Cayenne Pepper, 1/2 Tbsp Salt, 3/4 tsp Black Pepper. Bring to boil and reduce to simmer and cook until thickened. About 30 minutes. Puree in Blender.

GRILLING

1. Grill over direct flame Medium Heat and grill until Marked and cooked halfway through, about 15 minutes. Turn Chops and place on cooler side of grill and cover until thermometer inserted in thickest part of Chop is 140º about 15 minutes. Uncover and brush all sides with Sauce, cover and Grill until glazed, about 5 minutes . Transfer to cutting board and brush with sauce and Tent with Foil and let rest 10 minutes and serve. Serve with warm Sauce on side..
