6 large onions
2 qts. tomatoes, juice drained, then put through a ricer
3 cans tomato sauce
10 Italian sausages
3 qts. beef broth
3 handfuls of dried mushrooms, soaked in hot water until soft. Squeeze water out, and pound in mortar
5 stalks celery, finely chopped
6 carrots, peeled and finely chopped
4-5 rosemary leaves
˝ c. red wine
Grated parmesan cheese

Fry the sausage and put aside. Sauté the carrots, celery, onions, and mushroom in some of the fat from the sausage. Add the tomato sauce, and tomatoes and simmer ˝ hour. Add wine, beef broth and sausage, rosemary, and cook for 3 hrs. Use this sauce as the marinara for lasagne. Top your lasagna with parmesan cheese.
