2 tbsps. vegetable oil
4 lb. beef roast
1 can cream of mushroom soup
1 envelope dry onion soup mix
1¼ cups water, divided
6 potatoes, quartered
6 carrots, cut into pieces
2 tbps. flour

Directions:
Directions:
In hot oil, cook roast until brown on all sides, spoon off fat. Stir in mushroom soup, onion soup mix and 1 cup water. Reduce heat to low, cover and simmer 2 hours, turning occasionally until meat is tender. Add vegetables. Cook until roast and vegetables are tender, up to 40 minutes. Remove roast and vegetables. In a cup stir together flour and ¼ cup water and gradually add to sauce, cook until thickened. Pour sauce over roast.
