2 C red potatoes
¾ lb of green beans
1 large head of broccoli
1 ½ C chopped bell peppers
9 oz sausage (not ground) turkey, beef or chicken
6 T olive oil
¼ t red pepper flakes (optional)
1 t paprika
½ t garlic powder
1 T dried oregano
1 T dried parsley
¼ t salt
¼ t pepper

Preheat oven to 400º

Line a cookie sheet with foil or parchment paper

Prep the veggies (cut potatoes small so they will be tender in time), trim the green beans and halve, chop the broccoli and peppers, and coin the sausage into slices.

Place all the veggies and sausage on the sheet. Pour the olive oil and the spices on the top. Toss or stir to evenly coated.

Bake 15 minutes, remove and stir around. Remove and stir around. Return to oven and bake for another 10-15 minutes till veggies are crisp and tender.

If desired, sprinkle with freshly grated Parmesan cheese as soon as they come out of the oven.

Enjoy with rice or quinoa if desired.
