1 ½ C water
½ C honey
⅓ C butter
5 ½ C flour, divided
½ C quick-cooking oats
2 t salt
2 t yeast
2 large eggs
1 t cold water
1 large egg white
½ C quick-cooking oats
Directions:
Directions:
½In medium saucepan, combine water, honey and butter; heat over low heat until liquids are warm (do not boil)

In a large bowl or a bread mixing machine, add 5 C of flour, cooking oats and salt and yeast; mix to blend.

Gradually mix in warm liquids and mix until liquids are absorbed

Add eggs and mix for about 3 minutes until all ingredients are mixed together.

Remove dough onto a lightly floured surface and knead in the remaining ½ C flour knead about 5 minutes til nice and smooth.

Roll dough into a ball and place in lightly greased bowl, turning to grease the top

Cover and let rise in a warm area until dough doubles (about 1 hour) Punch dough down and divide into 8 equal pieces

Roll dough into 12 inch logs/1 ¼ in round.

Place them between 2 cookie sheets, lined with parchment paper

Cover, let rise till doubled in size (about 1 hour) Preheat to 375º

In small bowl, combine cold water and egg white and whisk until frothy; brush tops with egg mixture

Sprinkle quick cooking oats over the top surface of loaves

Bake for 20-25 minutes or until top is lightly browned and bread sounds hollow when tapped

Cool on wire rack

Can also make 2--4½x8½ inch leaves; if you do this, bake for 35-40 minutes or until done.
