1 C flour
½ t salt
½ t cinnamon
½ C sugar
¼ C plain applesauce
½ t vanilla
1 t baking powder
½ t baking soda
2 T butter, room temp.
½ C brown sugar
1 large egg
2 C quick-cooking oats
1 C chocolate chips

Directions:
Directions:
Preheat oven to 350º and line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.

In a large bowl, cream together the butter and the sugars. Beat in the egg, followed by the applesauce and the vanilla. Working by hand, stir in the flour and oats until combined and no streaks of flour remain. Stir in chocolate chips.

Drop tablespoonfuls of the dough onto the cookie sheet, flattening each cookie slightly. Bake for 10-12 minutes or until light brown at the edges.

Let cool on sheet for 3-4 min, then transfer to a wire rack to cool completely.

Store in airtight container.
