3 cups shredded coconut
1 t. vanilla or almond extract
1/8 t. salt
2/3 cup honey, melted slightly if solid
4 egg whites
1 t. cream of tarta

Directions:
Directions:
Preheat oven to 350 degrees.

Beat egg whites until still peaks form. Fold into coconut mixture along with cream of tartar.

Scoop mixture firmly into a cookie scoop and press into a greased cook sheet as you drop it (the idea is to compact the balls). Bake for 10 to 15 minutes or until browned.

Cool cookies and dip into chocolate glaze if desired.

3/4 cup chocolate or chocolate chips
1 1/2 T. coconut oil
1 1/2 T. butter
1 T. brown rice syrup
1/4 t. vanilla extract
