3 lbs. skin-on, bone-in chicken, cut up
1 clove garlic, chopped
½ c. oil
⅓ c. lemon juice
½ c. melted butter
1 small onion, grated
1 c. minced parsley
1½ tsp. salt
1 tsp.thyme
½ tsp. marjoram
1 tsp. rosemary
½ T. paprika

Marinate chicken in refrigerator overnight. Grill slowly on barbecue until chicken skin is slightly charred/crisp.

I think all of us can remember the family dinners and gatherings at Mom and Dad’s with the wonderful barbecued chicken! Dad loved barbecuing hamburgers too. He couldn’t wait for a piece of the burger to break off as he flipped it for the first time. It would barely be warm yet, and he’d pop it into his mouth. I also remember him making a little “sandwich” with a piece of bread, a chunk of raw hamburger Mom was getting ready for burgers, and a slice of onion...yum!
