The last 30-45 minutes of roasting your turkey, turn the oven up to 400 and take the cover off of the pan. As brown accumulates in the pan, add water. Do not let it bake dry. Add at least 4 cups of water.
When turkey is done, move to a platter and let it rest while you make the gravy. Bring liquid to a boil in the roaster. Pre mix the thickening by mixing 2-3 cups of water with flour and whisk. It should be fairly thick and smooth, but still runny.
Stirring the hot liquid constantly, add the thickening a small amount at a time until desired thickness. Stirring constantly will keep it from getting lumpy.
