4 large skinless catfish fillets (6-8 oz ea)
1½ c. buttermilk
1 c. yellow cornmeal
1 tsp. paprika
1 tsp. onion powder
¼ tsp. cayenne
3 T. peanut oil

Directions:
Directions:
Season fillets with freshly ground pepper, and place them in a shallow bowl. Add buttermilk and let them soak for 15 minutes. Combine cornmeal, paprika, onion powder, and cayenne in a separate shallow bowl. One at a time, dredge the fillets and set aside.
Completely cover a large sauté pan with oil and heat it over high heat until oil sizzles at the drop of a tiny piece of fish. Add the fillets and cook 3-4 minutes until golden. Flip and cook an additional 2-3 minutes. Serve immediately.
