2 c all purpose flour
2 t baking soda
½ t salt
2 t ground cinnamon
3 large eggs
2 c sugar
¾ c vegetable oil
¾ c buttermilk
2 t vanilla extract
2 c carrots, grated
8 oz can crushed pineapple, drained
3 ½ oz flaked coconut
1 c chopped pecans

Mix together all wet ingredients
Mis together all dry ingredients
Combine and put into a baking pan and bake at 350 for 25-30 minutes or until you stick a toothpick or knife into the center and pull it out and it is clean and dry
 

Glaze

1 c sugar
1 1/2 t baking soda
1/2 c buttermilk
1/2 c butter
1 t light corn syrup
1 t vanilla extract

Directions:

Bring first 5 ingredients to a boil in a large Dutch oven over medium-high heat. Boil, stirring often, 4 minutes. Remove from heat, and stir in vanilla. Pour all over the baked cake and let soak in
 

Frosting

4 c powdered sugar
1/2 c butter
8 oz cream cheese, softened
3 t vanilla extract

mix together all ingredients, wait until cake is completely cool then ice cake however you want
