2 cups cooked grits
1 egg beaten slightly
1/2 cup fine bread crumbs or seasoned flour
1 tbsp. water
4 tbsp. bacon grease or Wesson oil

Directions:
Directions:
Pour cooked grits into a pan so that it will be about 1/2 inch thick. Refrigerate for several hours. cut chilled grits in 2 inch strips or squares. Combine beaten egg and water. Dip grits in egg and then roll in crumbs or flour. Heat grease or oil in a heavy skillet and sauté grits slowly until browned on all sides. This is good served with blackberry jelly.
