1 1/2 lbs small Yukon gold potatoes
2 T. EVOO
2 smashed garlic cloves
3/4 t. salt
pepper
sharp cheddar cheese
chopped chives

Directions:
Directions:
Preheat oven to 450º.

Microwave potatoes about 10-12 minutes, turning halfway through and cool slightly.

Smash down, toss with EVOO, garlic, salt and pepper. Roast on baking sheet about 30 minutes, until crisp. Sprinkle with cheese and chives while hot.
