1/4 cup butter
1/4 cup light cream
2 egg yolks
1 tbsp lemon
1/2 tsp mustard powder
1/4 tsp salt

Directions:
Directions:
Melt butter slightly. Beat egg yolks. Whisk all ingredients together till smooth. Heat on medium in saucepan or put in microwave and stir between cooking for 30 seconds each time.
For Eggs Benedict, poach eggs, serve on English muffin topped with ham and Hollandaise Sauce.
Also good topped with avocado, shrimp and tomato and Hollandaise Sauce or smoked salmon and spinach or tomato.
