4 slices bacon
2 onions, chopped
1 c. bell pepper, chopped
1 c. parsley, chopped
1 c. celery chopped
2 cloves garlic finally minced
2 large cans pork and beans
1 can Rotel tomatoes
1 can pimiento, chopped
1 Tblsp. Prepared mustard
1 tsp. chili powder
salt and pepper to taste

Directions:
Directions:
Fry the bacon strips crisp, remove from drippings and set aside. Saute all of the fresh vegetables in the bacon drippings until tender. Add beans, tomatoes, pimientos, seasonings and crumbled bacon. Place in a casserole or bean pot and bake at 300 degrees for 1 ½ hours. Serves 10 to 12
