8 oz ground turkey
4 oz finely chopped shrimp
1/4 C finely chopped water chestnuts
2 Tbs soy sauce
1 Tbs dry white wine
1 tsp grated fresh ginger
1/2 tsp salt
1/4 tsp ground white pepper
8-12 oz pkg won ton skins
~ 1 Tbs beaten egg

In a bowl, mix turkey, shrimp, chestnuts, soy, wine, ginger, S&P.

Place 1 won ton skin (diamond direction) on flat surface (keep remaining wontons covered with damp cloth). Mound 1 tsp filling near lower corner; fold that corner over filling and roll to tuck point under mound. Moisten two corners nearest you with beaten egg; pull them toward you and overlap in front of the filling (back corner should point up. Pinch together firmly to seal.

Place on lightly floured baking sheet; cover with plastic wrap until ready to cook or freeze.

CAN MAKE WONTONS 5 HOURS BEFORE MAKING SOUP; COVER AND CHILL (OR FREEZE ON BAKING SHEETS FOR 2 HOURS, TRANSFER TO FREEZER BAGS...CAN KEEP 6 MONTHS).
