2 cans of black-eyed peas
1 can diced tomatoes or Rotel tomatoes
1 can corn (optional)
2 medium jalapenos- minced
1 small onion, diced
½ bell pepper, diced
1 avocado, diced
½-1 lime, juiced
¼ cup chopped cilantro
6 TBSP red wine vinegar
6 TBSP olive oil
½ tsp salt and pepper
½ tsp garlic powder
1 tsp cumin

Directions:

Mix all ingredients. Refrigerate 2 hours to 2 days. Taste and adjust seasoning.
