1 (12 oz) pkg crawfish tail meat or 2lbs fresh crawfish peeled
½ cup butter
1 yellow onion, small diced
3 medium red skin potatoes, small diced
5 cloves of garlic chopped
¼ cup all-purpose flour
3 cups half-and-half
1 (15 oz) can diced tomatoes
1 cup corn
2 cups of seafood or chicken stock
2 tsp dried thyme
1 tsp salt
1 tsp creole seasoning
1 tsp black pepper

Directions:

1. In a large pot, melt butter over low heat.
2. Add onions, potatoes, and garlic. Cook until onions are soft, stirring constantly (about 5 min)
3. Stir in flour to coat vegetables
4. Slowly began to whisk in the half-and-half, one cup at a time. Let mixture come to a simmer before adding the next cup.
5. After adding the half-and-half, stir in tomatoes, corn, stock, thyme, salt, creole seasoning, black pepper & cayenne.
6. Bring to a low simmer; cook for 15 min.
7. Add crawfish
8. Cook for 10 more min. Until crawfish and heated through.
9. Add additional stock to adjust consistency.
