˝ onion, chopped
Small amount of oil
2⅓ cup Arborio (or Vialone Nano rice)
2.5 liters chicken broth
1 full glass of champagne
300gram shredded Parmesan cheese
400mg saffron
Pat of butter

Directions:
Directions:
Chop 1/2 onion, sauté in olive oil along with rice.
Splash in champagne (full glass champagne)
Stir constantly. After liquid
is gone add chicken broth, a bit at time (2.5 liter of broth).
After 20 mins, add Parmesan (300g of a good Parmesan shredded) and saffron (400mg). Add a pat of butter, and stir in.
Serve.
