1 c. sour cream
1 (28oz.) can green enchilada sauce (Las Palmas is best)
2 (4oz.) cans diced green chilies
12 corn tortillas
3 c. cooked chicken/rotisserie chicken
2 c. shredded monterey jack cheese
Fresh cilantro, chopped

Directions:
Directions:
Preheat oven to 350º. Coat 9x13 pan with cooking spray. In small bowl, combine green enchilada sauce, diced chilies, and sour cream. Spread enough of the mixture around bottom of pan to coat. Layer 4 tortillas over sauce, add half the chicken, 1/3 of the remaining sauce and 1/3 of the cheese. Repeat. Top with last 4 tortillas, remaining sauce and remaining cheese.
Bake for 30-35 minutes until heated through and cheese is melted. Sprinkle fresh cilantro over top and let sit for about 10 minutes before serving.

This is very mild, so if you like spice - use hot enchilada sauce and/or green chilies!
