1 large onion, chopped
1 Tbsp. olive oil
4 garlic cloves, finely chopped
1 tsp. ground cumin
1 bay leaf
1 cup red lentils, rinsed
3 ½ cups chicken broth
3 cups water
2 Tbsp. chopped parsley

Directions:
Directions:
Cook onion in olive oil with ½ tsp. salt until softened. Add garlic, cumin and bay leaf. Cook for 1 minute. Add lentils, broth, water and let simmer for 30 - 45 minutes. Remove bay leaf and season with salt, pepper and parsley. Serve.
