5 ½ to 6 cups flour
4 ½ teaspoons active dry yeast
1 envelope dry onion soup mix (4 to 6 serving size)
2 ¼ cups water
2 tablespoons sugar
1 teaspoon salt
2 tablespoons shortening
Cornmeal
1 beaten egg white
1 tablespoon water

In a bowl, combine 2 ½ cups flour and the yeast. Combine water with the soup mix in a saucepan; simmer, covered for 10 minutes. Stir in sugar, shortening, and salt. Cool well. Add to dry mixture. Beat at low speed for 30 seconds, scraping bowl. Beat for 3 minutes at high speed. Stir in enough remaining flour to make a moderately stiff dough.

Knead on a floured surface until smooth and elastic, 8 to 10 minutes. Shape into a ball. Place in a greased bowl, turning once. Cover; let rise in a warm place until doubled, about 1 hour.

Punch the dough down; divide in half. Cover; let rest 10 minutes. Shape into 2 long loaves, tapering ends. Place on a greased baking sheet sprinkled with cornmeal. Slash tops diagonally, ¼-inch deep. Cover and let rise until doubled, about 30 minutes.

Bake at 375°F for 20 minutes. Brush with an egg white beaten with 1 tablespoon water. Bake 10 to 15 longer. Remove from pans to cool on wire racks.
