1 lb. ground chuck
1/2 lb. Italian sausage
3/4 c. Panko breadcrumbs
1/2 c. whole milk ricotta cheese
2 eggs
2 T. chopped fresh parsley
1 1/2 t. dry oregano
1/8 t. red pepper flakes
salt & pepper

Directions:
Directions:
Preheat oven to 350º. Spray large rimmed cookie sheet with non stick spray.
In large bowl, combine ground beef, sausage, breadcrumbs, ricotta, eggs, parsley, oregano, crushed red pepper flakes, salt & pepper. Mix gently with your hands.
Roll out into about 24 balls and arrange on cookie sheet.
Bake until they are firm to the touch, about 20-25 minutes. Remove from oven and drain any excess fat, if any. Serve immediately or let cool and freeze.

I make a double or triple batch of these - freeze on a cookie sheet after baking and put in a ziplock bag. I pull out as many as I need when I need a quick dinner! Heat your favorite marinara on the stove and add as many frozen meatballs as you want. Cook some pasta or grab some hoagie bread and you've got a quick spaghetti or meatball sandwich dinner!
