2 eggs, lightly beaten & scrambled
3 c. cold, cooked brown rice
16 oz. frozen mixed veggies (I like peas & carrots)
1-2 c. diced, cooked chicken
3-4 T. soy sauce or liquid Aminos (Bragg's)
1 T. sesame oil
Chopped green onion, optional

Directions:
Directions:
Heat large skillet or wok over medium high heat. Add grapeseed (or other high-heat oil) to coat the bottom of the pan. Add rice. Allow rice to coat until they begin to brown on the bottom, about 3-4 min. Add frozen veggies and stir to combine; cover for a few minutes to cook. Add chicken and keep stirring to prevent sticking. Add soy sauce/aminos and sesame oil to pan and stir to combine. You can add a little water if you have some brown bits on the bottom of the pan towards the end. Add eggs in and serve. Top with chopped green onion, if desired.
