1 lb. chicken breast, cut up into bite size pieces
1 onion, chopped
1 green pepper, chopped
1 - 10 oz. pkg frozen corn, thawed
1 cup chicken broth
1 cup salsa
1 1/2 cups instant rice
1/2 cup shredded cheddar cheese

Directions:
Directions:
Heat 1 tbps oil in large skillet on medium high. Add chicken, onions, and pepper. Cook and stir until onion is cooked through. Add corn, broth, and salsa. Bring to a boil. Add rice and cover. Remove from heat. Let stand 5 minutes. Fluff with fork. Sprinkle with cheese. Let stand a few minutes until cheese melts.
