Marinade:
1/2 Tbs soy sauce
1/2 tsp salt
1 Tbs cold water
1 Tbs cornstarch
1 egg yolk

Sauce:
4 Tbs sugar
3 Tbs vinegar
4 Tbs cold water
4 Tbs catsup
3 tsp cornstarch
1 tsp salt
1 tsp Sesame oil

1 lb pork tenderloin, cubed
2 green peppers
4 slices pineapple
6 C peanut oil

Directions:
Directions:
Pound pork with back of cleaver; cut into 1" squares. Soak with marinade for at least 1/2 hour.

Cut green peppers into 1" squares; same with pineapple; set aside.

Heat 6 C oil in wok. Coat pork pieces in 1/2 C cornstarch. Deep fry approximately 2 minutes or until golden brown; remove and drain on paper towels. Reheat oil and refry once again. Remove meat and drain.

In frying pan, stir-fry green pepper and pineapple in 2 Tbs oil. Add ingredients to sauce and stir until thickened. Turn off heat. Add pork, mix well and serve immediately over hot rice.
